Ingredients
- SAUCE:
- 1/4 tea. pepper
- 1 egg
- 1/4 cup potato starch
- 1/2 cup water
- 1 lb. boneless chicken, cut into bite-size pieces
- vegtable oil
- 5 dried chilies, chopped
- 2 scallions, chopped
- rind from 1/2 an orange, cut into strips and dried

- 1/2 cup soy sauce
- 1/2 cup sugar or honey
- 1 Tbsp. oyster sauce
- 1 cup water

Step 1
Mix all sauce ingreditents in a bowl. set aside.
Combine pepper, egg, potato starch, and water in a bowl. Add chicken. Toss until chicken is thoroughly coated. Cover and let sit for 30 minutes.
Fill a wok halfway with vegetable oil, heat to 375 degrees. Add chicken and fry for 2 minutes. Remove and drain. Fry again until coating is crispy. Remove and place in a serving dish.
Remove all but two teaspoons of the oil from the wok. Add chilies, scallions and orange rind. Stir-fry for a few seconds. Add sauce and heat until warm. Pour sauce over the chicken and serve immediately.
