Ingredients

  • 4 cups tomatoes, peeled, chopped and drained
  • 1 1⁄4 cups onions, chopped
  • 3/4 cups green peppers
  • 1/2 cup jalapeno pepper, seeded & chopped
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • 2 Tbsp. kosher salt
  • 1 ⁄6 cup sugar
  • 1 ⁄6 cup vinegar
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/4 cup fresh cilantro, chopped

Preparation

Step 1

Mix all together and bring to a slow boil for 10 minute.

Seal in jars and cook in hot water bath for 10 minute.

Note: This is a mild, chunky salsa, if you want a smoother salsa cut your veggies into smaller pieces.

Yields Eight 1/2 pint jars.
