  • 1/4 cup paprika
  • 1-1/2 tsp course ground black pepper
  • 1-1/2 tsp salt
  • 3/4 tsp chili powder
  • 3/4 tsp ground cumin
  • 1-1/2 tsp garlic powder
  • 1-1/2 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1-1/2 tsp dried oregano
  • 5 lbs chicken wings
  • Dipping Sauce:
  • 1/4 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/2 tsp minced garlic
  • 1/2 tsp minced shallot
  • 1 Tbsp chopped parsley
  • 1 Tbsp chopped chives
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp red wine vinegar
  • 1/2 tsp sugar
  • 3 tsp seeded chipotle peppers in adobo, chopped fine
  • 3 tsp adobo sauce from peppers

Preparation

Step 1

To prepare the wings, combine the spices in a large bowl. Add the chicken wings and toss until well-coated with the spice mixture. Place the wings in a single layer on 1–2 baking sheets. Place the baking sheets in a smoker and smoke at 275° for 3-1/2 hours.
To prepare the dipping sauce, combine all the ingredients in a medium-size bowl. Refrigerate until ready to serve.
