Ingredients

  • COOKIES:
  • 1/2 C butter, softened
  • 1 1/4 C brown sugar
  • 1 egg
  • 1 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 1/4 C white flour
  • 1/4 C wheat flour
  • 1/2 C apple juice
  • 1 medium granny smith apple, shredded
  • 1 tsp vanilla
  • FROSTING:
  • 5 Tb butter
  • 3/4 C brown sugar
  • 5 Tb apple juice
  • 3 C powdered sugar
  • 1 tsp vanilla
  • dash salt

Preparation

Step 1

1. Preheat your oven to 350 degrees.

2. Place 1/2 C softened butter and 1 1/4 C brown sugar into your stand mixer or large mixing bowl. Mix it for 2-3 minutes. Add 1 egg and mix for an additional 2 minutes.

3. In a separate bowl combine 1 tsp baking soda, 3/4 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp salt, 2 1/4 C white flour and 1/4 C wheat flour. Toss it together to combine. Add it to the creamed mixture.

4. Add 1/2 C apple juice to the mixer and mix for 1 minute.

5. Grab 1 beautiful granny smith apple, peel it, core it and shred it up.

6. Add the shredded apple and 1 tsp vanilla to the mixer. Mix just until combined.

7. Spray a large cookie sheet with cooking spray and drop the batter by spoonfuls onto the sheet.

8. Bake for 10 minutes, or until the tops of the cookies spring back when lightly tapped. Remove to a wire rack and allow to cool completely.

9. Into a medium-sized sauce pan place 5 Tb butter, 3/4 C brown sugar and 5 Tb apple juice. Bring it to a boil over medium high heat, while stirring.

10. Remove the pan from the heat and stir in 3 C powdered sugar, 1 tsp vanilla and a dash of salt. Stir it vigorously to combine, making sure it's nice and smooth.

11. Quickly, now seriously guys...quickly, frost the cookies. As the frosting cools it will start to set up, you want to be able to frost the cookies while it is still silky smooth. Now, if it starts to step up on you, put the pan back on the stove top, turn the heat to medium high and allow it to melt a bit to spreading consistency. All will be well, I promise.
