Ingredients

  • 2 cups graham cracker crumbs
  • 8-10 tablespoons butter, melted
  • 4 cups peeled, cored and chopped apples
  • 1 / 3 cup white sugar
  • 1/4 cup brown sugar
  • 2 1/4 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • caramel topping from store
  • mini muffin tin papers ( not in original recipe but these tended to fall apart when I made them.

Preparation

Step 1

Preheat oven to 350 degrees.
Grease mini muffin pan with butter spray or put in mini muffin papers
Melt butter
In a medium sized bowl, mix graham cracker crumbs, and butter. I put in enough butter so the crumbs hold together. Too much and the butter will "pool" in the bottom of the muffin tins.
Evenly distribute in 24 mini muffin cups. Press along the bottom and sides to form a cup.
Bake for 5 minutes and cool completely.
Chop the apples into little pieces. Mix apples, sugars, flour, cinnamon and nutmg in a bowl.
Bake in a baking dish for 15 minutes on 375 for 15 minutes, until apples are slightly softened. I thnk next time I'll just do this on top of the stove.
Scoop a teaspoon or so into each graham cracker cup, while still in the muffin tin. Sprinkle a little graham cracker on top.
Bake for 5 minutes on 350 degres.
Drizzle with caramel topping.
