Moroccan Tomato Soup

Ingredients
- 2 onions chopped
- 2 cloves garlic minced
- 2 Tbsp brown sugar
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/4 - 1/2 tsp cayenne (I use 1/2 tsp)
- 1 can (796 ml) tomatoes
- 2 c water
- 1/4 c tomato paste
- 1 Tbsp red wine vinegar
- 3/4 c smooth peanut butter

Preparation
Step 1
In a slow cooker combine onions, garlic, sugar and spices. Stir in tomatoes, water, tomato paste and vinegar.
Cover and cook 5-8 hours on low
Add peanut butter, using immersion blender and puree soup 'til smooth.
(I let mine cool and used the cusinart to puree then reheated on low)
