Ingredients
- 1 1/2 lb carrots, cut crosswise into 1/2" slices
- 1 length (2") fresh ginger, peeled and thinly slivered ( 1 1/2 - 2 Tbsp)
- 2 cloves garlic, thinly sliced
- 4 scallions, whites and greens separated, thinly sliced
- 3 Tbsp butter
- 1 Tbsp sugar
- 1/2 tsp salt
- 3 cups water

Step 1
In large skillet, combine carrots, ginger, garlic, scallion whites, butter, sugar, salt and water. Bring to a boil over medium high heat. Cook, tossing occasionally, until water has evaporated and carrots are tender and glazed, about 35 minutes. Serve garnished with scallion greens.
