Ingredients

  • 3 1/2 cups crushed fresh pineapple, juices reserved
  • 1 large jalapeno, finely chopp3ed
  • 2 Tbsp. red pepper flakes
  • 4 cups sugar
  • 1 lemon, zested and juiced

Preparation

Step 1

Combined all ingredients in a medium saucepan. Bring mixture to a rapid boil over high heat, stirring frequently. Lower the heat to medium and cook for 15 minutes, stirring ofter to prevent scorching.

Remove the mixture from the heat and allow it to cool before serving or placing in jars.

Ladle into sterilized jars, seal with lids and process in a hot water bath for 10 minutes.
