Ingredients

  • 1 3/4 c whole wheat pastry flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 apple, grated
  • 1 large carrot, grated
  • 1 c buttermilk
  • 4 Tbsp. brown sugar
  • 1/2 c mashed banana (2 small)

Step 1

Preheat oven to 350. Mix dry ingredients. Mix wet ingredients in separate bowl Add dry ingredients. Do not overmix. Add walnuts, dried cranberries, raisins, etc. Bake about 22 minutes.
