Ingredients
- 2 cups chopped red sweet peppers
- 1/2 cup chopped onion
- 2 Tbsp. vegetable oil
- 2 cups peeled and chopped mangoes
- 1/4 cup packed brown sugar
- 1/3 tsp. crushed red pepper
- 1/4 tsp. salt
- 3 Tbsp. seasoned rice vinegar
- 2 Tbsp. finely chopped green onion

Step 1
1. In a large skillet cook sweet peppers and onion in hot oil over medium heat about 5 minutes or just until tender. Stir in mangoes, brown sugar, crushed red pepper, and salt. Bring to boiling, reduce heat. Simmer, uncovered, for about 10 minutes or until mangoes are tender. stir in vinegar. Cool slightly.
2. Transfer mixture to a food processor or blender. Cover and process or blend until nearly smooth. Stir in green onion.
3. Brush sauce on smoked or grilled poultry as it grills. If desired, reheat any remaining sauce and serve with poultry.
