Ingredients
- 1 small spaghetti squash (2 1/2#)
- 1/4 cup pitted kalamata olives, chopped
- 2 Tbsp. Pecorino Romano cheese
- 2 Tbsp. parsley, chopped
- 1 Tbsp. olive oil
- 2 tea. red wine vinegar
- Option: stir in some mini pepperoni

Step 1
Pierce squash all over. Microwave on high 14 minutes or until tender. Let cool. Cut squash in half, discard seeds. With fork, scrape squash into strands in a medium bowl.
Mix in olives, cheese, parsley, olive oil and red wine vinegar.
Serves 4
