  • 1/2 c. firmly packed brown sugar
  • 3/4 stick (6 Tbsp.) unsalted butter, softened
  • 3/4 tsp. cinnamon
  • Cake:
  • 1 stick (1/2 c.) unsalted butter, softened
  • 2/3 c. granulated sugar
  • 2 large eggs
  • 1 c. all purpose flour
  • 3/4 tsp. baking powder
  • 1/2 tsp. salt
  • thinly sliced apples, peaches, etc., or blueberries, raspberries, etc.(optional):

Step 1

Make the topping: Combine the topping ingredients in a food processor and pulse until the topping is well combined and crumbly.

Preheat the oven to 350 degrees and butter and flour an 8-inch round or square baking pan.

In a bowl with an electric mixer cream together the butter and the sugar until light and fluffy; add the eggs 1 at a time, beating well after each addition; sift in the flour, baking powder and salt. Beat the batter until it is just combined. Spread it evenly in the pan.

If adding fruit, arrange the fruit on the batter, slightly overlapping slices or putting berries close together to cover the batter completely.

Sprinkle the topping over the batter/fruit.

Bake the cake in the middle of the oven for 50-60 minutes or until a tester comes out clean. Serve warm or at room temperature.
