Ingredients
- 3 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 3 cups all purpose flour
- 3 carrots – peeled and grated
- 1 (15 oz) can crushed pineapple ***
- 1 1/2 cups vegetable oil
- 2 cups white sugar
- 6 eggs
- 1 cup chopped walnuts
- 1 1/2 cup raisins

Step 1
Preheat oven to 375 degrees. Grease and flour two 9” x 5” loaf pans.
Sift together baking soda, salt, spices and flour.
In a large bowl, combine ground carrots, pineapple, oil, and sugar. Mix in eggs. Blend flour mixture into carrot mixture. Mix well. Fold nuts and raisins into batter. Pour into prepared pans.
Bake for 45 minutes, or until a toothpick inserted into bread comes out clean.
*** When I first made this I only had a 20 oz can of chunk pineapple which I drained and then crushed in the food processor. I used the drained juice and added vegetable oil to equal 1 ½ cups. I also used 1 cup white and 1 cup brown sugar.
