Ingredients

  • 1 6 ounce zucchini; cut into one inch rounds
  • 1 yellow pepper; cut into 1/4 inch strips
  • 1 red onion; cut into 1/4 inch strips
  • 16 large fresh button mushrooms; halved
  • 16 cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoon honey
  • 1/2 cup low sodium soy sauce
  • 1/4 cup lemon juice
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon black pepper

Step 1

Put vegetables in a large bowl or plastic bag. Whisk together oil, soy
sauce, honey, lemon juice, vinegar and garlic. Pour over vegetables and mix
gently to coat. Chill, covered, 2 - 3 hours.

Preheat an outdoor grill to medium heat (325°F-375°F) or oven to 400°F.

Drain vegetables in a colander and transfer to grill or sheet pan for oven.
Grill or roast for 15 minutes. Sprinkle with salt and pepper.
