Ingredients

  • Salad:
  • 1 baguette, cut into cubes
  • 3 Tb. olive oil
  • 2 red bell peppers
  • 2 green bell peppers
  • 1 red onion
  • Vinaigrette:
  • 1/4 c. balsamic vinegar
  • 2 cloves garlic, finely chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 3/4 c. olive oil

Preparation

Step 1

1. For the salad: Preheat oven to 375 degrees.

2. Place baguette cubes in a single layer on a baking sheet and drizzle with olive oil. Bake until golden brown and crunchy, about 20 minutes.

3. Thinly slice pepper and onion in a food processor and toss with toasted bread cubes in a large bowl.

4. For the vinaigrette: In a large bowl, mix balsamic vinegar, garlic, salt and pepper. Whisk in olive oil in a slow steady stream until all is combined.

5. Pour half of the vinaigrette over the salad and toss. Let sit 5-10 minutes before serving. Serve remaining vinaigrette on the side.
