Ingredients

  • 2 c. chopped peaches, (plus 1 whole peach sliced for garnish)
  • 2/3 c. superfine sugar
  • 2 tsp. grated lemon or orange zest
  • 1/3 c. peach schnapps , or peach liqueur
  • 2 (750 ml.) bottles rose, (like Spanish Rosado by Chivite)
  • 203 c. sparkling water , or soda
  • lavender or mint, to garnish each glass

Preparation

Step 1

1. Combine the chopped peaches, sugar and lemon zest and let sit for 1 hour.

2.. Combine the macerated peaches, schnapps and rose in a large (preferably clear) pitcher and stir to blend. Refrigerate for 30-60 minutes.

3. TO SERVE: Add the soda and stir to blend. Add ice cubes and stir to chill. Serve with a peach slice speared with lavender or mint on the lip of each glass.

VARIATION: Freeze 2 trays of ice cubes with a raspberry or rose petal in each.
