  • BASIC WAFFLE RECIPE
  • 2 cups flour
  • 1/4 cup confectioners' sugar
  • 2 tea. baking powder
  • 12/2 tea. salt
  • 1/4 tea. baking soda1 1/2 cups milk
  • 1 1/2 sticks butter, melted
  • 2 eggs

Step 1

BASIC RECIPE: Whisk flour, sugar, baking powder, salt, and baking soda in a large bowl.

In a separate bowl, whisk milk, butter and eggs. Pour into the flour mixture and stir until just combined., (A few lumps are fine)

Preheat waffle iron; lightly brush with butter, then fill with batter 3/4 full and cook until the waffles are golden and crisp.

QUICK BREADS: Just prepare batter for quick bread and cook in a waffle iron.

CHILE CORNBREAD: Replace 1 cup flour with cornmeal. Add 1 cup each thawed frozen fire-roasted corn and shredded pepper jack cheese, 1/4 cup chopped cilantro and 1 minced seeded jalapeno to the batter. Top waffles with honey and hot sauce.

SALAMI-PROVOLONE: Add 1.2 cup each shredded provolone and grated parmesan, 2 oz. finely chopped salami and 1 tea. pepper to the batter.

FETA AND BACON: Add 8 chopped cooked bacon slices, 1/4 cup feta, 2 tea. ancho chile powder and 2 tea. chopped thyme to the batter.
