Ingredients

  • 7 potatoes
  • Olive oil
  • 1 stick butter
  • Milk
  • 1/2 cup sour cream
  • 1/4 pkg. cream cheese
  • Large handful
  • Handful of shredded cheddar cheese
  • Dash of milk

Preparation

Step 1

Wash baking potatoes, dry. Coat the potatoes with oil and wrap in aluminum foil. Bake for 1 hour. Let cool slightly so you can handle them. Cut a slice off the top and scoop out the potato leaving about 1/4-1/2 inch of potato shell. Mash the cooked potato with butter, milk, sour cream, small amount of cream cheese and bake at 350 degrees until hot and browned on top.

Add the milk a little at a time while mashing to make sure it it is the same consistency of mashed potatoes. Salt and pepper to taste.

They freeze well and can be frozen for up to a month.
