Ingredients

  • 2 T EVOO
  • 12 oz pkg cooked chorizo sausage, sliced 1 in thick
  • 1 med yellow onion, diced
  • 2 cloves garlic, minced
  • 6 c low sodium chicken broth
  • 4 c sweet potatoes, peeled & cut into 1/2 in cubes (about 2 med sweet potatoes)
  • 14.5 oz can diced tomatoes
  • 3/4 t kosher salt
  • 1/2 lb turnip greens, roughly chopped

Step 1

In lg Dutch oven, heat oil over med high heat. Add chorizo; cook, stirring occasionally until browned, about 8 min. Remove using slotted spoon & let drain on paper towels reserving drippings in pan.

Add onion; cook stirring occasionally until tender, about 3 min. Add garlic; cook until fragrant, about 1 min. Add broth, sweet potatoes, tomatoes & salt; bring to boil. Reduce heat to med low; cover & simmer until potatoes are tender, about 20 min. Add chorizo & turnip greens; cook until greens are wilted, about 5 min,
