Ingredients
- 2 c. all-purpose flour
- 3/4 c. packed dark brown sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1 c. cooked mashed sweet potatoes
- 1/2 c. pure maple syrup
- 2 large eggs
- 1/4 c. unsalted butter, melted
- 1/4 c. milk
- 2 tsp. vanilla extract
- 3/4 c. chopped pecans

Step 1
Preheat oven to 350 degrees. Grease a 9x5x3" loaf pan; set aside. In a medium bowl, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon and ginger. In a separate bowl, combine sweet potatoes, maple syrup, eggs, butter, milk, and vanilla; stir well to mix. Combine flour mixture and sweet-potato mixture, stirring until just blended. Stir in pecans. Spread batter evenly into prepared pan. Bake for 50 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool on wire rack.
