Ingredients
- 2 (6") low-fat flour tortillas, (bonus if you buy whole wheat)
- 1 garlic clove, peeled and finely minced
- 1 tsp. chopped fresh Italian parsley
- 2 Tb. chopped tomato
- 2 Tb. chopped yellow bell pepper
- 2 oz. grated fat-free cheddar cheese
- 2 oz. grated fat-free mozzarella cheese
- 2 Tb. freshly grated Parmesan cheese

Preparation
Step 1
1. Lightly spray an 8 or 10" nonstick skillet with cooking spray. Cook each tortilla over medium heat, turning once, for 1 minute per side. Transfer the tortillas to a plate.
2. Sprinkle half of each tortilla with garlic and parsley. Top with tomato, bell pepper, cheddar, mozzarella, and Parmesan. Fold the tortillas in half to cover the filling.
3. Spray the skillet with more cooking spray. Turn the heat to medium. Place the quesadillas in the skillet and cook them for 2-3 minutes per side, turning once, until the cheese is melted. Cut each quesadilla in half.
