Ingredients

  • Filling
  • 3/4 lb. 85% ground beef
  • 3/4 lb. ground pork
  • 1 t salt, 1/2 t pepper
  • 1 T veg oil
  • 1 onion finely chopped, 1 grn bell pepper finely chopped
  • 6 scallions (shite parts) finely chopped
  • 3 cloves minced garlic
  • 1/4 t cayenne pepper
  • 2 T A.P. flour
  • 1 C chicken broth
  • Diced green parts of scallion
  • Dough
  • 4 C A.P. Flour
  • 2 t salt
  • 1 t baking powder
  • 8 T veg shortening (Diced and Cold)
  • 1 C chicken broth
  • 2 whisked eggs

Preparation

Step 1

saute the meats in a saute pan or skillet. salt and pepper. cook just until the meat isn't pink any longer. remove to a bowl. Add the veg. oil to the same pan then add the onions, bell pepper, and scallions. Add 1/2 t of salt and pepper. Saute til lightly browned. Add the minced garlic and the cayenne. Saute 30 seconds. Add 2 T A.P. Flour. mix, then add meat back into pan then stir til flour taste has been cooked out ( 1 Min). Stir in chicken broth and cook 3 mins til thickened. Remove to a bowl and add the diced greens from the scallions. mix and let cool.

Make the dough:
add the flour, bking powder, and salt to food processor then pulse til blended. Add the cubed Veg. Shortening and pulse 6-8 times til it resembles corn meal. Add chicken broth and eggs, then pulse 6-8 times or until it starts to form a dough. Remove to floured work surface and knead for 20 seconds. cut dough into 16 equal pieces. roll to rounds then roll into 6" circles.. Add 1/4 cup of filling on each. Brush water on edges then fold and seal. Clean up with pizza cutter for cleaner look, then fork a seal on each. Fry in 350 deg. oil until golden brown, about 3-5 mins each side. drain and serve
