Lemon Madeleines

Ingredients
- 1 c. cake flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. unsalted butter, softened
- 3/4 c. sugar
- 2 large eggs
- 1 egg white
- 1 Tb. lemon zest
- 1/2 tsp. vanilla
- Garnish: powdered sugar

Step 1
Preheat oven to 325 degrees. Spray a Madeleine pan with nonstick baking spray with flour. In a medium bowl, sift together flour, bakiing powder, and salt. In a separate bowl, beat butter at medium speed with an electric mixer until fluffy. Gradually add sugar, beating until light and creamy. Add eggs and egg white, one at a time, beating well after each addition. Add lemon zest and vanilla, beating until combined. Gradually add flour mixture to sugar mixture, beating until well blended. Spoon a heaping teaspoon into each cup of prepared pan. Bake for 18-20 minutes, or until golden brown. Cool in pan for 10 mintues, remove from pan and cool completely on a wire rack. Repeat with remaining batter. Garnish by sprinkling with powdered sugar.
