- 1 1/4 c. sugar
- 1 stick unsalted butter, chilled
- 1 Tb. lemon juice, plus grated peel of 2 lemons
- 1 large egg
- 1 1/2 c. flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt

Step 1
1. Preheat the oven to 350 degrees. Line 3 large cookie sheets with parchment paper. Using an electric mixer, beat 1 cup sugar, the butter, lemon peel and lemon juice until fluffy. Mix in the egg, then the flour, baking soda and salt.
2. In a small bowl, add the remaining 1/4 cup sugar. Roll heaping teaspoons of dough into balls, then roll in the sugar. Place a few inches apart on the prepared cookie sheet. Bake until golden at the edges, about 15 minutes. Transfer the cookie sheets to racks to cool.
