Key Lime Cheesecake

Ingredients
- Crust:
- 1 1/2 c. graham cracker crumbs
- 1/2 c. macadamia nuts, chopped
- 2 Tb. sugar
- 1/2 c. unsalted butter, melted
- Filling:
- 3 (8 oz.) cream cheese, softened
- 1 3/4 c. sugar
- 1 c. sour cream
- 3 Tb. flour
- 3 large eggs
- 2/3 c. Key Lime juice, (or more to taste)
- 1 tsp. vanilla
- 3 c. strawberries, halved, for garnish

Step 1
Line a springform pan with foil and coat with cooking spray. To make crust: in a medium bowl, stir together ingredients til they come together. Press into prepared pan, bottom and about 1" up the side. Preheat 350 degrees. To make filling, beat (with a mixer) cream cheese and sugar til smooth, about 2 minutes. Blend in sour cream and flour, beating until smooth. Add eggs, one at a time, beating well after each addition. Add the lime juice and vanilla and beat just until blended. (Taste to see if more lime juice is needed.) Scrape filling into the prepared pan and bake until center is just about set, about 1 hour and 15 minutes. Turn off oven, leave cake inside and leave the door ajar for 1 hour. (Helps cake cool evenly and prevents cracking). Remove pan from oven, place on a rack, and let cool completely. To unmold cheesecake, remove from refrigerator, take off outer ring and peel foil away from rim of cake. Run a long or offset spatula underneath cake to loosen it from the foil and slide cake onto serivng platter. Decorate with strawberries and set slice onto individual plates with pool of strawberry sauce.
