In my opinion, this is the best way to eat kale! It's loaded with dark leafy green nutrients and stays crisp for days. This salad is best when it's been marinating for an hour or longer. It's a great dish to bring to a picnic or just share at home.

Ingredients

  • salad:
  • 2 bunches kale
  • 1/2 cup pine nuts
  • 1/2 cup feta
  • 1 cup green grapes, halved
  • 1 avocado, diced
  • marinade:
  • 2 lemons (juiced)
  • 5-10 cloves garlic, minced
  • 1/4-1/2 cup olive oil
  • 1 tsp agave nectar or other sweetner

Step 1

Wash kale and separate leaves from stems. Tear the kale into bite-sized pieces in a large bowl (preferably with a lid).

In a separate bowl, whisk marinade ingredients together. Add marinade to kale and mix thoroughly.

Add the rest of the salad ingredients and mix again. (Or shake with the lid on!)

This salad can be eaten immediately, or made the night before for extra flavor.
