Ingredients
- 1 teaspoon corn oil
- 2 tablespoons minced shallots
- 2 stalks lemon grass bulbs smashed
- 1 large tomato, seeded and cored, fine dice
- 1/2 lb mushrooms sliced thin
- 1 1/2 teaspoons sugar
- 6 cups water
- 1/2 lb shrimp
- 6 tablespoons fish sauce
- 3 tablespoons fresh lime juice
- 1/4 lb thin rie vermicelli
- 1/2 cups beans sprouts
- 1/2 teaspoon crushed red pepper
- 2 tablespoons sliced scallion

Preparation
Step 1
saute shallots and lemon grass for a minute
add tomatoes then mushrooms and sugar. stir for about 1 min. add water bring to a boil.
simmer 10 min.
Add shrimp, fish sauce, lime juice and noodles and 2 min.
discard lemon grass.
add beans and crushed pepper top with scallions.
