  • 1 teaspoon corn oil
  • 2 tablespoons minced shallots
  • 2 stalks lemon grass bulbs smashed
  • 1 large tomato, seeded and cored, fine dice
  • 1/2 lb mushrooms sliced thin
  • 1 1/2 teaspoons sugar
  • 6 cups water
  • 1/2 lb shrimp
  • 6 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 1/4 lb thin rie vermicelli
  • 1/2 cups beans sprouts
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons sliced scallion

Preparation

Step 1

saute shallots and lemon grass for a minute

add tomatoes then mushrooms and sugar. stir for about 1 min. add water bring to a boil.

simmer 10 min.

Add shrimp, fish sauce, lime juice and noodles and 2 min.

discard lemon grass.

add beans and crushed pepper top with scallions.
