Ingredients
- 1 (28 ounce) can crushed tomatoes
- 2 (8 ounce) cans tomato sauce
- 1 (6 ounce) can tomato paste
- 1/2 cup water
- 3 cloves garlic, minced
- 1 tablespoon granulated sugar
- 1 shallot, finely minced
- 1 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 pinch crushed red pepper flakes
- 1 bay leaf

Step 1
1) Add the oil to the pressure cooker and sauté the shallot until golden brown. Add the garlic and sauté for an additional 30 seconds. Add the tomatoes, tomato sauce, tomato paste, vinegar, oregano, sugar, red pepper, tomato paste, and water.
2) Lock the lid into place and bring to high pressure. Once the pressure is achieved, turn the heat to low and cook for about 5 minutes. Remove from the heat and allow pressure to release naturally. Remove bay leaf. Stir in the lemon juice and basil, and add salt and pepper to taste.
