Ingredients
- 2 large red bell peppers
- 2 tbsp. minced garlic
- 4 cup fresh basil
- 3 tbsp. EVOO
- 2 cups half and half
- 1/4 cup grated cheese
- 4 tbsp. butter
- Salt and pepper to taste

Preparation
Step 1
1. Preheat broiler. Lightly coat the red peppers with olive oil.
2. Grill peppers under the broiler until the skin in blackened.
3. Remove the seeds and skin from the peppers. Cut into small pieces
4. In a skillet, cook and stir the garlic, basil, red peppers, and 3 tbsp. EVOO.
5. Cook for 10 minutes
6. Place mixture in blender and puree
7. Return puree to skillet and reheat to a boil.
8. Stir in the half and half and the cheese
9. Cook until the cheese melts
10. Add the butter
11. Simmer 5 minutes.
