Ingredients
- Peel cucumbers, remove seeds & slice lengthwise in finger thin spears. (Best to use overgrown, almost overripe cukes).
- In bottom of jars place 2-3 cloves garlic & 1 red pepper (chilies).
- 6 1/4 cups sugar
- 2 1/2 cups white vinegar
- 3 1/4 cups hard water

Step 1
Fill jars with cucumbers.
Bring to boil:
6 ¼ cups sugar
2 ½ cups white vinegar
3 ¼ cups hard water
Pour hot solution over top to fill within 1/2 inch of top of jars.
Put a sprig of fresh dill on top & seal jars.
To seal – place jars in a water-bath cooker & bring to a boil. Take off heat & leave jars in cooker until cool.
(I make pints instead of quarts!)
Don’t ask me how many cucumbers to buy…..I eyeball it & fill however many jars I end up with.
