Ingredients

  • 6 medium potatoes, cut into cubes
  • 3 stalks celery, sliced
  • 6 cups chicken stock
  • 2 T flour
  • 4 sprigs parsley, chopped
  • 3 carrots, sliced
  • 2 onions, chopped separately
  • 2 T butter
  • Salt and pepper to taste

Preparation

Step 1

Put potatoes, carrots, celery, and one chopped onion and the chicken stock in the stockpot and cook until tender. Saute the other chopped onion in butter until lightly brown. Mix in flour to thicken. Add one cup of liquid from stockpot to the saute pan, and stir until smooth. Pour contents of saute pan into soup. Stir and cook until thickened; add seasoning to taste and garnish with chopped parsley.
