Preparation
Step 1
1. Saute meats w/ onions and garlic. Drain on paper towels. Put meat mixture in a large bowl, add eggs, basil and provolone. Mix well
2. Cook manicotti in boiling water for 1/2 the time indicated on the box. You don't want them fully cooked. Drain, rinse if desired.
3. Spray 13x9" pan w/ cooking spray. Spread one cup of pasta sauce in bottom of the pan.
4. Stuff the meat mixture into the partially cooked noodles - you can use a small spoon or clean fingers. Place stuffed noodles on top of sauce. When all noodles are in pan, pour a 28 oz jar of sauce over the noodles. (You will have some pasta sauce remaining, use in another recipe). Cover the pan w/ greased foil, seal tightly and bake in 350 oven for 45 minutes. Remove foil from pan and sprinkle mozzarella cheese over the top, return to oven and bake an add'l 15". Let sit 5-10 minutes before serving.
