Ingredients
- 1/2 cup of butter
- 1/3 cup of white sugar
- 2 eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup of sweet corn kernels

Preparation
Step 1
1. Preheat oven to 375 degrees. Grease an 8 inch square pan.
2. Melt the butter in saucepan. Remove from heat pour into a mixing bowl. Stir in sugar. Quickly add the eggs, one at a time, and beat until combined.
3. In a separate bowl combine the buttermilk with baking soda and stir well. Pour into the butter mixture and stir well.
4. Use a wooden spoon to stir in the cornmeal, flour, and salt until mixed well and and only a few small lumps remain. Add the corn kernels and mix well.
5. Spoon batter into pan.
6. Bake in the oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
