Ingredients
- For breading:
- 4 firm green tomatoes
- 1 egg with 2 T water for dipping
- 4 T butter
- 1/2 c bread crumbs
- 1/4 c yellow cornmeal
- For sauce:
- 2 T melted butter
- 2 T flour
- 1 1/2 c whipping cream
- 2 T chopped fresh chives
Preparation
Step 1
Whisk the egg and water together in a bowl. Mix breading ingredients together. In a frying pan add butter. Cut tomatoes into 1/2 thick slices. Dip in egg then breading. Fry until brown on both sides adding butter to pan as needed.
For sauce melt butter in a pan, add flour and whisk until smooth. Gradually add whipping cream and continue whisking until smooth. Stir in chives and pour sauce on tomatoes.
