Ingredients
- 1/2 cup Cantaloupe, peeled, seeded and thinly sliced
- 1 serrano chili peppers, stemmed and sliced
- 2/3 cup chopped tomatoes
- 1/2 cup toasted walnuts
- 1/3 cup cider vinegar
- 3 tablespoons sugar
- 1/2 teadpoon salt

Preparation
Step 1
In a large bowl combine Cantaloupe,pepper, tomatoes and walnut.
In a small saucepan heat vinegar, suga and salt. Cook and stir until sugar is dissolved. Bring to aa simmer. Pour over cantaloupe mixture; let stand 20 minutes, stirring occasionally. Serve over 2 cups cooked farro with burrata cheese. Makes 4 servings
