Golden Potato Latkes

  • 2 pounds Yukon gold potatoes, peeled, cut into 1-inch pieces
  • 1 8-ounce onion, cut into 1-inch pieces
  • 2 large eggs
  • 2 tablespoons unsalted matzo meal
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon baking powder
  • 8 tablespoons (or more) vegetable oil

Preparation

Step 1

Shred potatoes and onions with medium shredding blade of food processor. Transfer mixture to a kitchen towel; wrap tightly and squeeze out as much liquid as possible. Place potato mixture in large bowl. Mix in eggs, matzo meal, salt, pepper, and baking powder. Preheat oven to 300°. Place a baking sheet in oven. Heat 4 tablespoons oil in heavy skillet over medium-high heat. Drop heaping 1 tablespoon potato mixture for each latke into skillet; flatten to 21/2 to 3-inch diameter. Fry latkes until crisp and golden brown, about 3 minutes per side. Transfer latkes to baking sheet in over to keep warm. Repeat with remaining mixture adding more oil as needed. Serve latkes warm with sour cream and applesauce.
