Ingredients
- toppings:
- evoo
- 2 bell peppers, chopped
- 1 tbsp diced chilis
- 1 red onion, chopped
- 2 garlic cloves, chopped
- 2 cans (15 oz ea) black beans, rinsed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 can (15 oz) fire roasted diced tomatoes
- 1 tbsp brown sugar
- 1 tbsp worchestershire sauce
- 1 lime, juiced
- dill pickles
- cilantro

Preparation
Step 1
In large skillet, heat evoo on medium-high heat; add bell pepper, chilis, onion & garlic & cook 6-8 minutes; add black beans, cumin & coriander; season w/salt & pepper.
In bowl, combine tomatoes, brown sugar & worchestershire sauce; add to skillet & simmer 2-3 minutes; stir in lime juice.
Serve on rolls; top w/pickles & cilantro.
