Ingredients
- ● 6 chicken breast
- ● 1 lb. meatballs
- ● 1/2 onion; chopped
- ● 1/2 lb. of carrots (cut into small pieces)
- ● 1/2 stock celery; chopped
- ● 1 bag of baby spinach
- ● 1/2 cup small pasta (acini di pepe)
- ● Garlic, Salt & Pepper to taste
- ● Chicken broth (3 quarts)

Preparation
Step 1
1. In a large pot, add chicken, carrots, celery and onion. Cover with water and boil
2. When chicken is cooked (tender) remove the chicken; set aside to cool.
3. Shred or cut the chicken into small pieces
4. Lightly Sauté the meatballs in a separate pan
5. Add the chicken, spinach, and meatballs back into the broth
6. Add the 2 cans of chicken broth
7. Bring the soup to a boil, let simmer for 20 minutes
