Ingredients
- 1 lg egg
- 1 tablespoon of lemon juice
- 1 teaspoon of Worcestershire sauce
- 1/4 teaspoon salt
- 8 grinds of fresh black pepper
- 1 small garlic cloves, pressed (1/4 teaspoon)
- 1 1/2 teaspoon anchovy paste or 4 anchovy fillets minced
- 1/3 cup olive oil
- 2 medium head romaine lettuce washed, dried and torn
- 1/3 cup grated Parmesan cheese
- Croutons (optional)

Preparation
Step 1
1. Bring water to a boil in a small saucepan over high heat. Carefully lower the whole egg into water; cook 45 seconds. Remove with slotted spoon. When cool enough to handle crack egg into a small bowl with all the over dressing ingredients except oil. Whisk until smooth. Add oil in a slow steady stream, whisking constantly until smooth.
2. Place lettuce in a bowl with 1/2 dressing, toss to coast. Sprinkle with cheese, and rest of dressing.
