Ingredients

  • olive oil
  • kosher salt 2 tsp
  • pepper 1 tsp
  • other spices as desired
  • whole turkey 12+ pds

Preparation

Step 1

preheat oven to 450
stir together oil, salt, pepper
rinse inside & out of turkey
pat dry with paper towels
To Spatchcock turkey :
start with the breast side down
use poultry shears to cut along both sides to remove bak bone
open the turkey then turn it breast side up place your hand on one side of the breast and push down firmly until you hear a crack
repeat on both sides
place the thighs outward so it lies flat
tuck the wings under to secure
transfer to rimmed baking sheet let stand for 30 min
rub turkey allover with oil mix
baste every 20 min for 1 hr 10 min until a thermometer put into the thickest part of the thigh reads 165
let stand 20 min before carving
To Carve:
cut off legs & wings then slice the breast meat
