Ingredients
- 1 butternut squash,cut into cubes
- 1 Vidalia onion,halved and sliced into 1/2 " ribbons
- 4 dried figs
- 8 cups lettuce
- 1/2 cup walnuts
- 1 cup goat cheese
- Dressing
- 1/4 cup olive oil
- 2 Tbs balsamic vinegar
- 1 Tbs lemon juice
- 2 tsp maple syrup
- 1 Tbs whole grain mustard
- 1/4 tsp black pepper
- 1 clove garlic,minced
Preparation
Step 1
Preheat oven to 400. Cube the squash and toss with onion,1 Tbs olive oil,salt and pepper. Roast on parch paper lined cookie sheet for 35 min.
Whisk the dressing. Toss salad with 3/4 of the dressing. Top with squash,onions,walnuts,cheese and figs. Drizzle rest of dressing. Serve right away.
