Ingredients

  • 1 butternut squash (about 2 lbs) peeled and cut into 1/2 " cubes.
  • 4 Granny Smith apples, peeled , cored and cut into 1/2" cubes.
  • 1/4 cup brown sugar
  • 1 TBSP flour
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamon seeds
  • 1/4 tsp ground nutmeg
  • 4 TBSP unsalted butter, melted, sea salt and freshly ground pepper

Step 1

Heat the oven to 350F. Butter a 9x13 glass baking dish. Toss the squash and apples together. Add the sugar, flour, cinnamon, cardamon, nutmeg, butter and salt and pepper to taste. Toss well to combine. Spread out evenly in the baking dish and cover. Bake for 30 mins, then remove the cover and bake for 15 mins longer or until the squash is tender.
