creamed chicken & biscuits
- 1/2 large onion, chopped
- 1 1/2 tsp butter
- 4 cups cooked shredded chicken
- 1 can (10.75 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup chopped pimento
- 1 cup shredded cheddar cheese
- 6 frozen biscuits, thawed
Preheat oven to 350; grease bottom & sides of 11x7 baking dish.
Heat butter in small skillet until melted; stir in onion & saute.
Combine onion, chicken, soup, sour cream, milk & pimiento in medium bowl; spoon mixture into baking dish; bake 15 minutes & remove from oven.
Sprinkle baked layer w/3/4 of cheddar; arrange biscuits in single layer; sprinkle w/remaining cheddar.
Bake until biscuits are golden brown & sauce is bubbly (20 minutes) & serve.
