Ingredients

  • 4 cups chopped broccoli spinach washed and sliced
  • 3 large leaves of swiss chard (silver beet or spinach) washed and sliced including the stalks
  • 1 large florrette of cauliflower roughly chopped
  • 1 large diced tomato
  • 1 cup dried organic Nori (I get mine from RawPleasure.com.au)
  • Hand full chopped fresh chives
  • Handful of chopped fresh coriander
  • 2-4 eggs (depending on how many serves you make)
  • 2 large tablespoons miso
  • Pepper
  • Chilli (optional)

Step 1



Add a cup of water to a medium pan and put in on a medium heat.

Add all of the vegetables and the nori to the pot and slowly simmer until the vegetables are cooked but not over done.

Add the eggs and stir them through then turn the heat off. There will be enough residual heat to finish cooking them

Stir through the miso and serve

This made one good serve for me but if you add a few more vegetables and the extra eggs it's would easily serve 2. Just remember to add a bit more miso as well or add to taste. Some like their miso very strong and other don't.
If you don't have miso then a good quality stock powder such as Vegeta Natural would also work.
