Ingredients

  • 1/4 c. feta cheese, finely crumbled
  • 1/4 c. cream cheese, softened
  • 2 Tb. mayonnaise
  • 1 Tb. minced fresh thyme
  • 1 Tb. minced fresh oregano
  • 1 Tb. lemon juice
  • 3 Tb. extra-virgin olive oil, divided
  • kosher salt and black pepper to taste
  • 10 (8" long strips) zucchini, sliced 1/4" thick and about 2" wide
  • lemon zest and fresh thyme

Step 1

Preheat grill to medium-high heat. Combine feta, cream cheese, mayonnaise, thyme, oregano, lemon juice, 1 Tb. oil, salt, and pepper for filling in a bowl.

Using remaining 2 Tb. oil, coat zucchini; sprinkle with salt. Grill zucchini, uncovered, over direct heat until tender, about 2 minutes per side. Set slices aside to cool.

Pat slices dry with paper towels and spread 1 tsp. filling evenly on each. Roll slices tightly. Top with lemon zest and thyme.
