Ingredients

  • optional condiments:
  • 6 whole wheat tortillas
  • 6 chicken cutlets
  • 3 T. your favorite cajun seasoning (I use Emeril's)
  • 3 T. EVOO
  • 3 c. long grain brown rice (cooked)
  • 1/2 c. light ranch dressing
  • 1/2 c. good BBQ sauce, or to taste *if you want your filling more moist, add more BBQ sauce)
  • 1 tsp. hot sauce, or to taste
  • 4 c. baked tortilla chips, crushed
  • shredded lettuce
  • chopped tomato
  • shredded cheese
  • salsa
  • sour cream
  • chopped cilantro
  • lime wedges

Preparation

Step 1

Preheat oven to 400.

Brush chicken cutlets, on both sides, with EVOO. Then sprinkle both sides with cajun seasoning. Place on a baking sheet, and bake in the oven for 30 - 35 minutes, or until chicken is done. Remove from oven and let cool for 5 minutes. Chop chicken into small pieces, and place in a large bowl.

Add warm cooked rice to the chicken. Add in ranch dressing, BBQ sauce and hot sauce. Mix until chicken and rice are thoroughly coated in the sauces. Add crushed tortilla chips on top and gently fold into mixture.

Serve on warm tortillas with any condiments that sound good to you!

NOTE: To make this dish vegetarian, substitute black beans for the chicken, for a delicious black bean and rice burrito. You can also add any canned bean, or refried bean to the chicken mixture for a heartier burrito.
