Grilled Steak Burgers

Ingredients
- 3 lb. beef chuck, very cold, cut into 1/2" cubes
- kosher salt and freshly ground black pepper, to taste
- 8 oz. cheddar cheese, sliced
- 8 hamburger buns, split
- melted unsalted butter, for brushing
- 1/4 c. mayonnaise
- 2 Tb. ketchup
- 1 Tb. sweet relish
- 1/4 tsp. cider vinegar
- lettuce, sliced tomatoes, and onions for serving

Step 1
Prepare medium-hot fire in grill.
Season beef with 1 Tb. salt and pepper to taste. Using a food grinder, grind beef with coarse grinding plate; do not overhandle meat or pile it more than 3" high. Separate into 8 portions. Gently form meat into patties. Place on parchment-lined baking sheet.
Place burgers on grill. Cover grill, cook until sides of burgers are light brown, 6-8 minutes. Using wide spatula, gently turn burgers over; top with cheese. Cover grill; cook 1 minute more. Transfer to platter.
Brush cut sides of buns with butter. Toast buns, buttered sides down, about 2 minutes. In small bowl, combine mayonnaise, ketchup, relish, vinegar, salt and pepper. Serve burgers on buns iwth condiments.
