Neapolitan Brownie Ice Cream Cake w/ Fruit Topping

Ingredients
- Cake
- Brownie Mix - use your favorite recipe or a box mix
- 1 container Strawberry Ice Cream
- 1 (8 oz) tub Whipped Topping, thawed
- Fruit Topping
- 1 cup sugar
- 1 cup Frozen Fruit - any kind
- 1 tablespoon lemon juice

Step 1
Cake
Mix brownies according to box, spread in 13x9 pan. Be sure to under bake a little.
Cool completely
Set ice cream out to soften slightly. Scoop onto brownies, run a spatula under hot water and spread ice cream evenly.
Freeze up to 4 hours or overnight
Remove from freezer and spread on whipped topping
Fruit Topping
Place all ingredients in a saucepan, stir well
Cook over medium-low heat until gently boil, continue to cook for 3-5 minutes or until thickened
Mash berries with a potato masher
Drain fruit mixture or leave in, depending on the texture you like
To serve - remove cake from freezer about 15 minutes before serving. Use a hot knife to cut.
Serve with fruit topping
