Ingredients

  • DRESSING:
  • 2 (6oz) skinless, boneless chicken breast halves
  • 1/8 tsp kosher salt
  • 1 tsp olive oil
  • 4 C chicken broth, divided
  • 1 C uncooked pearl barley
  • 2 C cubed seeded cucumber
  • 1 C grape tomatoes, halved
  • 1/2 C cubed yelled bell pepper
  • 1/3 C feta cheese
  • 1/4 C chopped pitted kalamata olives
  • 3 TBL olive oil
  • 1 tsp grated lemon rind
  • 2 TBL fresh lemon juice
  • 1 TBL minced fresh basil
  • 1 tsp red wine vinegar
  • 1/2 tsp kosher salt
  • 3 garlic cloves, minced

Preparation

Step 1

to prepare salad, sprinkle chicken w/ 1/8 tsp salt
heat 1 tsp oil in skillet over med high heat
add chicken
cook 2 min on each side or until browned
add 1 C broth
cover
reduce hat
simmer 10 min or until done
cool
shred chicken
discard broth

bring 3 C broth to boil in lg saucepan
add barley
cover, reduce heat & simmer 35 min or until liquid is absorbed
fluff w/ fork
cool
combine chicken, barley, cucumber & next 4 ingredients (through olives) in lg bowl

to prepare dressing, combine 3 TBL oil, rind & remaining ingredients
stir well
add to barley mixture
toss well
cover & chill
