Shortbread Cookies

Easy holiday cookies. Just mix the dough, shape into logs, chill, slice, and bake.

Ingredients
- 2 sticks unsalted butter, softened
- 1/2 cup sugar
- 1/4 cup light-brown sugar
- 1/4 tsp. salt
- 2 large egg yolks
- 2 cups all-purpose flour

Step 1
1. Beat butter until shiny and smooth. Add both sugars,and then the salt. Beat until well blended. Stir in the egg yolks. Add the flour gradually, mixing gently, until dough is soft.
2. Gather the dough into a ball,divide it into half, and foll each half into a 9" long log. Wrap and chill for at least 3 hours.
3. Preheat oven to 350. and line two baking sheets with aluminum foil. Slice one log into 1/3" thick coolies and arrange on the sheet. Bake for 17-20 minutes(roating baking sheet after 10 minutes) or until the cookies are golden around the edges. Cool for 2 minutes then transfer to a rack to cool to room temperature. When the baking sheets are cool, repeat with the remaining logs.
